About this Custom Cook
This cook uses the metal tray on the bottom level, and ONLY uses Zones 1 & 2 metal tray.
You will need to flip your ribs about halfway through the cook and will be prompted to do so.
Use a generous amount of a high smoke point oil in zones 1&2 before placing the ribs on the tray.
