INGREDIENTS
2.5 oz (½ cup) chopped pecans (optional)
7 oz granulated sugar
2.5 oz brown sugar (light or dark)
3 oz unsalted butter, at room temperature
2 eggs
2.8 oz milk
½ teaspoon vanilla extract
8.5 oz canned pumpkin puree
7 oz all-purpose flour
1 tablespoon pumpkin pie spice
1 teaspoon kosher salt
1 teaspoon baking soda
¼ teaspoon baking powder

GUIDED INSTRUCTIONS
1. Lightly butter or spray Brava loaf pan
2. Grind the sugar for 10 seconds on speed 8
3. Insert the butterfly whisk and beat the butter and sugar together for 3 minutes on speed 3
4. Remove butterfly whisk and scrape down the sides of the bowl with the spatula
5. Add eggs, milk, and vanilla and mix 15 seconds/speed 4
5. Scrape down the sides of the bowl with spatula
6. Add pumpkin and mix, 10 seconds speed 3
7. Scrape down the sides of the bowl with spatula
8. Add dry ingredients and mix 20 seconds speed 3.
9. Scrape down sides of bowl. If batter seems fluffy and airy, push down into bowl with spatula
10. Mix 20 seconds speed 3.
11. Scrape down sides of bowl and "deflate" batter if it again seems fluffy.
12. Add pecans, knead function for 12 seconds to incorporate
13. Pour batter into prepared loaf pan
14. Slide into top rack of Brava and bake xx minutes
15. Let bread cool in pan for 10 minutes, then turn out onto a wire rack. Allow to cool completely before slicing and serving.
