Cornbread Ingredients: Yields 32 Muffins
-1 3/8c All Purpose Flour
-1 1/4c Cornmeal
-3/4c + 1/8c Sugar
-1/2tsp + 1/8tsp Baking Soda
-1Tbsp + 1/4tsp Salt
-3 Eggs
-1 1/3c Creme Fraiche
-2/3c Brown Butter
1. Brown butteron stove top. In a small saucepan add butter and heat over medium low heat until butter is a golden brown color
2. Sift together dry ingredients
3. Mix wet ingredients
4. Slowly add dry ingredients to wet ingredients. Batter should be thick
While cornbread is still warm, slice in half and top with Bourbon Peach Jam, whipped cream, toasted pecans, or whatever you fancy!
