About this Custom Cook
This cook makes burgers as tasty as a steak and is designed to beautifully cook a single 8 ounce, 1 1/4" thick burger with your Brava. I will be sharing a similar cook for two 8 ounce burgers in the near future. The inside will be cooked to about almost 150° and still be pink and is safe to eat because it will have been pasteurized.
Different types of ground meat and different fat contents (I recommend 80/20 ONLY for this cook) may give slightly different results on the exterior. BUT the interior will always be cooked and pasteurized and safe to eat. Both sides of the burger should look like the burger in the photo. If they don't, post a photo and I will assist you. I have made regular ground beef, ground Elk, ground lamb, ground Wagyu, and a few other varieties of ground meat. The results of the exterior can vary a bit depending on the meat used. You may need to use the adjustment slider to customize this cook. Both sides of the burger should look like the burger in the photo. If they don't, post a photo and I will assist you.
You will need a frozen 8 ounce 1 1/4" thick frozen burger, salt, pepper (optional), burger press (optional), a small zip lock bag, ghee, the square pan, the glass tray and temperature probe for this cook.
Burger preparation (must be done at least 12 hours in advance):
Take your 8 ounces of ground meat, form right into a ball, put the ball in a small Ziploc bag, place the bag and the burger press and then squish it down to an inch and a quarter thick. Then put it in the freezer on a flat surface or put it on a plate and then put the plate in the freezer. You will never have to clean your press if you do this. IF you don't have a burger press, use a your hand to press on the burger ball until it is about 1 1/4" thick and 4" in diameter. You can shape the burger if needed to 'round' it out a bit.
Place the burger on a flat surface in your freezer for a minimum of 12 hours.
Square Pan Preparation:
Place a small amount of ghee in the pan. With a paper towel or brush, spread the ghee evenly over the interior surfaces of the pan.
Season the center area of the pan where you will be placing the burger with salt (not a lot but not a tiny amount either) and pepper (optional).
Place the flatter side of the burger (usually the bottom side) on the center area of the pan.
Season the top of the burger with salt (not a lot but not a tiny amount either) and pepper (optional)
Insert the square pan into your Brava. Press Start.
After approximately 10-12 minutes, you will be prompted to flip the burger over. Flip it and place it back on the same area you had it originally. Press Start.
After about 10 minutes, you will need to remove the Square Pan from your Brava. Transfer the burger to the center of zone two of your glass tray. IMPORTANT: Flip the burger over when transferring it.
Insert the temperature probed about 1 1/2" into the left side of your burger, middle area of the side. Do not slide it in all the way, you want the tip of the probed to be centered in the middle of the burger.
Slide the tray into the top level. Attach the connector end of the probe to your Brava. Close the door. Press Start.
Once the cook completes, carefully disconnect the temperature probe using gloves from your Brava and using gloves remove the glass tray from your Brava. Remove the probe from the burger (it will be hot so use gloves). Place the burger on a plate and then wait 5 minutes (use a timer). Then ENJOY!
