About this Custom Cook
Select a 3 to 4 pound pork belly with ribs.
Pierce the skin several times with a knife.
For a half a cup of vinegar over the skin.
Massage the belly on both sides with the vinegar .
Sprinkle a 1 tsp of garlic powder, 1 tsp of salt, 1 tsp of pepper, massage both sides of the belly with the mixture.
Refrigerate overnight uncovered.
Remove and pat dry.
Cook at 200° for 2 1/2 hours.
After 2 1/2 hours cook at 325° for an hour and a half.
Cook at 425° for 30 minutes
For 5 to 10 minutes slice into cubes
