About this Custom Cook
Ingredients:
5 eggs
7 tbsp of cottage cheese
1 tbsp of butter/ghee to grease the pan (room temp)
1.5 oz of shredded cheese of your choice (cheddar or gruyere are my favorite)
Salt and pepper to taste
1 tsp of chives (if you like it)
Total time: 2 hrs 15 min
Prep Time: 15 min
Cooking time: 2 hrs
Blend the eggs and cottage cheese (I use Nutribullet) for 10-15 seconds
Add salt and pepper to taste
Pour this mix into each greased muffin tray well (3/4 full)
Add shredded cheese and chives to each well and push down with a fork so it mixes a bit
Top it off with left over egg mix if there is room
You can also add pre-cooked bacon bites if you would like.
This is a 2-hour cook designed to make a sous-vide like egg bite. Insert the muffin tray after the preheat step.
These also do well in the fridge and then reheating for the next few mornings. Reheat on the glass tray bottom shelf for 6 - 7 minutes
