Roman Style Pizza

About this Recipe
This is our take on the classic Roman style of pizza: Pizza al Taglio, which simply translates to pizza that’s been baked in a square or rectangular tray. This style of pizza is popular in Rome and known for its thicker, almost focaccia-like crust. Shops that make pizza like this display it behind a glass counter and when you order it, you point to the style of pizza you want and gesture with your hands roughly what size you want, and the shop will cut it into a square with scissors.
Ingredients
- 12.0 fresh pizza dough
- 6.0 tomato-based pizza sauce (we love anything with San Marzano tomatoes)
- 4.0 shredded low-moisture mozzarella
- 2.0 shredded Parmigiano-Reggiano
- 8.0 count pepperoni slices (optional)
- 10.0 count basil leaves (optional)

Prep dough
- Place pizza dough in Brava Square Pan covered with a towel or plastic wrap.
- Allow pizza dough to rise at room temperature for at least 2-6 hours, or until the dough has relaxed and you notice air bubbles forming.

Prep pizza
- Spread pizza sauce evenly on top of dough.
- Evenly distribute shredded mozzarella on top of tomato sauce.
- Place pepperoni on top of mozzarella, if using.
- Add any other toppings as desired.

Cook pizza
- Place square pan on top shelf.
- Select ‘Roman Style Pizza’ on Brava touch screen and follow instructions to place square pan on top shelf and press green button.

Serve
- When your food is done, transfer pizza to cutting board.
- Arrange basil slices on top of pizza, if using.
- Sprinkle pizza with Parmigiano-Reggiano.
- Cut pizza into slices and serve.
