Shortbread Cookies

About this Recipe
This classic holiday treat comes together with only five simple pantry ingredients. Once you’ve made the dough, either roll into logs and slice into discs, or roll before cutting into festive shapes with cookie cutters.
Ingredients
- 1.0 cups unsalted, room-temperature butter (2 sticks)
- 0.5 cups granulated sugar
- 1.5 teaspoons vanilla extract
- ½ teaspoon kosher salt
- 2.0 cups all-purpose flour
- Coarse sugar for baking (optional)

Make dough
- Combine the butter, sugar, vanilla, and salt in a stand mixer or with an electric hand mixer, and beat on a medium speed, until pale and fluffy, about 2 minutes.
- On a low speed, gradually add the flour and mix until it’s fully incorporated, being sure to turn off the mixer a few times to scrape the sides of the bowl to make sure everything is well mixed. The dough will seem dry at first but will come together once mixed.

Prep dough & chill
- Prepare dough for either cut-out cookies or slice and bake.
- For cut-out cookies, scrape dough onto large piece of plastic wrap. Shape dough into disc, about 1 inch thick. Chill in refrigerator until firm, at least 30 minutes.
- For slice and bake cookies, scrape the dough onto large piece of plastic wrap. Shape the dough into a log about 2 1/2-inch in diameter. Chill in refrigerator until firm, at least 1 hour.

Shape & cut dough
- Select “Shortbread Cookies” on touchscreen and press green button to begin rapid preheat, being sure to keep Brava chamber completely empty during this step.
- Cut dough into desired shapes.
- For cut-out cookies, on lightly floured surface, roll disc of dough to 1/4 to 1/2-inch thick, rolling from the center outward in all directions. Lift and rotate to even out. Cut out cookies using cookie cutter. The scraps can be gathered a couple more times to roll and cut out more cookies. Arrange cookies evenly across all zones on Brava Metal Tray, keeping cookies about 1 inch apart. You will have more cookies than will fit on metal tray, bake one tray at a time and repeat with remaining dough as needed.
- For slice and bake cookies, roll log of dough in coarse sugar if desired. Use a sharp knife to slice cookies about 1/4 to 1/2-inch thick. Arrange cookies evenly across all zones on Brava Metal Tray, keeping cookies about 1 inch apart. You will have more cookies than will fit on metal tray, bake one tray at a time and repeat with remaining dough as needed.

Bake
- When Brava notifies you that it has preheated, slide metal tray into top shelf, and press green button to begin baking.
- Add touch up step to bake more at end, if desired.
- When cookies are done, let cool on metal tray for about 10 minutes, and transfer to wire cooling rack to completely cool before serving.
