Al Pastor is a method of preparing thinly-sliced pork that’s marinated, most typically with adobo sauce. Layers of pork are formed together into the classic ‘trompo’ shape, which translates to spinning top in English. While this Brava recipe doesn’t have that classic shape, it still hits all the notes you’d expect at your local taqueria. Instructions

    Marinate pork shoulder

    • In medium mixing bowl, pour adobo sauce over pork shoulder.
    • Cover and let pork marinade for 1-24 hours.

    Prep metal tray and cook

    • Add a very thin layer of cooking oil to all 3 zones of Brava Metal Tray.
    • Place marinated pork shoulder on top, spaced across all zones of Brava Metal Tray.
    • Slide metal tray into bottom shelf.
    • Select “Al Pastor Pork” on touchscreen and follow instructions.
    • This recipe involves heavy bottom sear and is intended to provide a similar char to the al pastor spit.
    • Ensure complete coverage of tray, reduce cook time or flip the meat early.

    Finish or store

    • When cook is complete, carefully remove metal tray.
    • Transfer pork to cutting board and chop into bits, and enjoy in tacos, bowls, enchiladas, quesadillas, and more.
