Greek Lemon Chicken and Potatoes

About this Recipe
This recipe puts a Greek spin on the existing Brava chicken thigh and potato combination. Olive oil, garlic, lemon, and oregano add a punch of flavor to the dish with a quick marinade before cooking. As a note, this recipe may yield a bit of smoky char as the chicken skin crisps up in the Brava. The result? Super crispy chicken skin with juicy meat, and perfectly tender potatoes.
Ingredients
- 3.0 count garlic cloves, minced
- 3.0 tablespoons lemon juice
- 3.0 tablespoons olive oil
- 1 teaspoon kosher salt
- 0.5 teaspoons dried oregano
- 0.25 teaspoons black pepper
- 3.5 cups diced Yukon Gold potatoes (1-inch pieces)
- 2.0 count bone in, skin on chicken thighs
- extra-virgin olive oil
- kosher salt and black pepper

Prep potatoes
- In small bowl, combine garlic, lemon juice, olive oil, salt, oregano and black pepper.
- In large mixing bowl, combine potatoes with 2 tablespoons of lemon garlic marinade.
- Place potatoes in Zones 2 and 3 of Brava Metal Tray, set mixing bowl aside.

Prep chicken
- In the same large mixing bowl used for potatoes, add chicken thighs and remaining marinade, and toss to combine.
- Cover bowl with plastic wrap and refrigerate chicken for 5 minutes.
- When ready, remove chicken from marinade, shaking off any excess marinade. (Note: it is important to thoroughly shake off the marinade as excess will burn.)
- Place chicken, skin side down, in Zone 1 of metal tray.

Cook chicken & potatoes
- Select “Greek Lemon Chicken & Potatoes” on the Brava touchscreen and follow instructions to slide metal tray into bottom shelf, and press green button to begin cooking.

Finish & serve
- When food is done cooking, serve while warm with additional lemon wedges, if desired.
