This take on Eggs Benedict comes to you from Brava and Vitamix. It’s the luxurious brunch classic we know and love - now wildly easy to make at home. The hollandaise sauce blends up in a Vitamix blender until it’s velvety, smooth, and quite frankly magical. Meanwhile in the Brava, eggs gently poach, Canadian bacon crisps up, and English muffins toast until golden brown. We can’t think of a better addition to your holiday brunch menu.
Ingredients
- For the Vitamix Hollandaise sauce:
- 6.0 count large pasteurized egg yolks
- 2.0 tablespoons fresh lemon juice
- 0.25 teaspoons salt (optional)
- 3.0 count drops hot sauce
- 1.5 cups unsalted butter, melted, warm
- For the Brava Eggs Benedict:
- Avocado oil cooking spray
- 1.0 count English muffin
- 2.0 count eggs
- 2.0 slice Canadian bacon or ham
- Few pinches chopped fresh herbs for serving, such as chives or parsley (optional)

Make the Vitamix Hollandaise Sauce
- Place the egg yolks, lemon juice, salt, and hot sauce into the Vitamix blender in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to Variable 8.
- Blend for 30 seconds.
- Remove lid plug and slowly add melted butter in a thin steady stream, until mixture becomes thickened, approximately 55 seconds. Set aside.

Prep English muffins
- Select “Brava Eggs Benedict with Vitamix Hollandaise Sauce” on the Brava touchscreen and follow on-screen instructions.
- Cut English muffin in half.
- Place English muffin halves, cut side down in Zone 2 of Brava metal tray.
- Slide metal tray into bottom shelf.

Prep eggs
- Spray back egg wells with cooking spray.
- Crack 1 egg into each back well of Brava egg tray.
- Add 3 tablespoons water to each egg well. Season with kosher salt and cracked pepper.
- Place 1 slice Canadian bacon in each front well of egg tray.
- Slide egg tray into top shelf.
- Press green button to begin cooking.

Finish & serve
- When food is done cooking in Brava, transfer English muffins to serving plate. Top each English muffin half with slice of Canadian bacon.
- Using spoon, gently remove each poached egg and arrange on top of bacon.
- Drizzle hollandaise sauce over each egg, and top with freshly cracked black pepper, and fresh herbs, if using. Store leftover hollandaise in airtight container in refrigerator for 1-2 days.
