Roasted Garlic and Herb Aioli

Ingredients

  • 1.0 count head garlic
  • 0.3333333333333333 cups mayonnaise
  • 0.25 cups chopped fresh herbs (chives, tarragon, parsley, basil and/or thyme)
  • kosher salt and black pepper

Instructions

    Prep garlic

    • Cut off top ½ inch of garlic head.
    • Place the garlic, cut side up, in Zone 2 of Brava metal tray.
    • Drizzle garlic with 1 tablespoon extra-virgin olive oil and season with a pinch of salt.
    • Using your hands, rub salt and oil into garlic.

    Roast garlic

    • Slide metal tray into top shelf.
    • Press green button to begin cooking.
    • While food cooks, prepare aioli.

    Make aioli

    • In medium bowl, combine mayonnaise, chives, tarragon, thyme leaves, and a pinch of salt and black pepper, stir well.

    Finish & serve

    • When your food is done, allow garlic to cool to room temperature, about 30 minutes.
    • Squeeze garlic cloves from skins.
    • In small bowl, using a fork, smash garlic until smooth.
    • Stir roasted garlic puree into mayonnaise mixture and serve.
