Chicken Parmesan is the quintessential Italian-American dish. Memories of red checkered tablecloths and wafts of garlic flood our minds. Chef George Duran “Brava-tized” this classic, making it faster and easier than ever. We hope you’re hungry, because there’s very little chance of leftovers with this recipe.
Ingredients
- 2.0 count Chicken Breasts (Boneless and Skinless)
- 0.25 teaspoons Granulated garlic
- 2.0 count Egg
- 0.5 cups Bread crumbs
- 0.5 cups Parmigiano-Reggiano
- 1.0 cups Marinara sauce
- 1.0 cups Fresh Mozzarella
- Fresh Basil
- Extra-Virgin Olive Oil
- Kosher Salt

2 mixing bowls or shallow baking dishes

Prep chicken and breading
- Pat chicken dry with paper towels.
- Season chicken on both sides with kosher salt and granulated garlic.
- Crack eggs into first bowl and lightly beat with a fork.
- In second bowl, combine panko bread crumbs and parmesan cheese; stir well.

Bread chicken
- Dip chicken into eggs and coat completely; shake off excess.
- Dip chicken into bread crumb mixture and coat evenly; shake off excess. Using your hands, gently press breading into chicken to ensure it adheres.
- Drizzle 1 tablespoon extra virgin olive oil on Zones 1, 2 and 3 of Brava metal tray.
- Evenly spread chicken in Zones 1, 2 and 3 of metal tray.
- Drizzle 1 tablespoon extra virgin olive oil on top side of chicken.

Cook chicken
- Slide metal tray into bottom shelf.
- Select “Chicken Parmesan” on your touchscreen and follow instructions.
- Press green button to begin cooking.
- Note: You will have to flip chicken after 3 minutes.

Flip chicken
- Once Brava notifies you, carefully remove metal tray.
- Flip chicken.
- Slide metal tray into bottom shelf.
- Press green button to continue cooking.
- Note: You will add sauce and cheese after 3 minutes.

Add sauce and cheese
- When Brava notifies you, carefully remove metal tray.
- Spoon marinara sauce on top of chicken.
- Sprinkle mozzarella on top of marinara sauce.
- Slide metal tray into top shelf.
- Press green button to continue cooking.

Serve
- When your food is done, transfer chicken to serving platter.
- Garnish with basil and serve.
