Butter Chicken

About this Recipe
This recipe was inspired by Brava Chef Erin’s friend, Lavanya, who is from New Delhi. Butter chicken is a popular Indian curry flavored with tomatoes, an array of spices and plenty of butter. In this recipe, the chicken is broiled on the metal tray before adding it to the Chef’s Pan, which resembles a more traditional method of making butter chicken. We suggest serving this with rice or naan to help soak up all the sauce and make a complete, tasty meal.
Ingredients
- 2.0 tablespoons plain whole milk Greek yogurt
- 4.0 cloves garlic, minced or grated
- 1.0 count 2-inch piece fresh ginger, peeled and grated
- 2.0 teaspoons sweet paprika
- 2.0 boneless, skinless chicken thighs (1-inch pieces)
- 2.0 count tomatoes, quartered
- 0.5 count red onion, quartered
- 1.0 tablespoons tomato paste
- 1.0 tablespoons garam masala
- 1.0 teaspoons coriander
- 0.5 teaspoons cumin
- 0.5 teaspoons cayenne pepper (optional)
- 6.0 tablespoons butter, divided
- 0.5 cups heavy cream
- 2.0 tablespoons honey
- 2.0 tablespoons roughly chopped cilantro (optional)
- kosher salt and black pepper

Instructions

Marinate chicken
- In medium bowl, stir together yogurt, garlic, ginger, paprika and pinch of salt and pepper.
- Add chicken thighs and stir to coat evenly.
- Cover and refrigerate for 20–30 minutes.
- While chicken marinates, prepare sauce.

Prep sauce
- In a blender, add tomatoes, red onion, tomato paste, garam masala, coriander, cumin and cayenne.
- Blend until smooth.
- Pour mixture into Brava Chef’s Pan.

Cook sauce
- Slide Chef’s Pan, uncovered, into top shelf.
- Select “Butter Chicken” on your Brava’s touchscreen and follow instructions.
- Note: You will remove Chef’s Pan after 18 minutes.

Sear chicken
- Once Brava notifies you, carefully remove Chef’s Pan.
- Remove chicken from marinade; shake off excess marinade.
- Spread chicken evenly across Zones 1, 2 and 3 of Brava metal tray.
- Slide metal tray into top shelf.
- Press green button to continue cooking.
- Note: You will remove chicken after 12 minutes.

Complete sauce
- When Brava notifies you, carefully remove metal tray.
- Transfer chicken to Chef’s Pan.
- In the Chef’s Pan, add 3 tablespoons butter, heavy cream, honey and a couple pinches of salt; stir well.
- Slide Chef’s Pan, uncovered, into top shelf.
- Press green button to continue cooking.

Finish & serve
- When your food is done, add remaining 3 tablespoons of butter and stir until butter is melted.
- Transfer chicken to serving bowl and garnish with cilantro.
