Ultimate Grilled Cheese

This recipe is inspired by the “Cheese Toastie” at London’s Borough Market. One of my colleagues gave me the recipe a few years ago. It’s simply the best grilled cheese I’ve ever tasted. Three different cheeses give complex, funky flavor, but the real secret is the inclusion of 3 different alliums. Red onion, leek and garlic add sweetness and a pungent bite that pairs nicely with the rich cheeses. A thin layer of mayonnaise on the outside helps the sandwich crisp to perfection. Don’t skip the softened butter on the inside - it’s a key component of the flavor! This sandwich is best made with large slices of high-quality sourdough bread, but you’ll only be able to fit 2 sandwiches on the tray. We recommend using square sliced sourdough sandwich bread if you want to make 3 or 4 sandwiches.
Ingredients
- 0.25 cups chopped leeks (½-inch pieces) (about ¼ of a small leek)
- 0.25 cups chopped red onion (½-inch pieces) (about ¼ of a large red onion)
- 1.0 count clove garlic, minced
- 1.0 english cheddar, grated
- 1.0 Gruyère, grated
- 1.0 fontina, grated
- 2.0 slices sourdough bread
- Mayonaise
- Butter at room temperature

Prep onion mixture
- In small bowl combine leeks, onions, and garlic; stir well and set aside.

Assemble sandwiches
- Evenly spread softened butter in Zone 2 of Brava metal tray.
- Spread a thin, even layer of mayonnaise on one side of each slice of bread. Place one bread slice, mayonnaise side down, on Zone 2 of metal tray.
- Spread butter on the other sides of bread slices.
- Spread cheddar, Gruyère and fontina on bread slice.
- Top cheeses with about 1 tablespoon onion mixture.
- Close sandwich with remaining bread slice, ensuring mayonnaise side is facing out.

Toast sandwich
- Slide metal tray into bottom shelf.
- Select “Ultimate Grilled Cheese” on your Brava touchscreen and follow instructions.

Serve
- When your food is done, cut sandwich in half and serve.
