This Crispy Chicken Sandwich hits all the right notes. It’s crunchy, juicy, savory, and balanced with fresh toppings. To make it, you’ll marinate chicken breasts in buttermilk before dredging them in seasoned flour and cooking until crispy. When done, enjoy the chicken in a sandwich with your favorite fixings—Chef Andrew recommends a little mayo, pickles, lettuce, and coleslaw.
Ingredients
- For the chicken:
- 1.0 count boneless, skinless chicken breast or cutlet, pounded to ¾-inch thick
- 0.25 cups buttermilk
- 0.25 cups all-purpose flour
- 1.0 tablespoons cornstarch
- 2.0 teaspoons garlic powder
- 2.0 teaspoons onion powder
- 2.0 teaspoons paprika
- 2 teaspoons kosher salt
- 0.5 cups cooking oil, such as grapeseed or canola
- For the sandwich:
- 1.0 count sandwich bun or roll, preferably brioche bun
- Mayonaise
- Lettuce
- Pickle slices
- Optional: coleslaw

Marinate chicken
- In small bowl, coat chicken with buttermilk.
- Let chicken marinate for at least 1 hour, preferably 24 hours.

Dredge chicken
- In medium bowl, stir together flour, cornstarch, garlic powder, onion powder, paprika and salt.
- Coat chicken in flour mixture on all sides.
- Put ½ cup cooking oil in Brava square pan.
- Place chicken in Brava square pan.
- Slide square pan into top shelf.
- Select “Crispy Chicken Sandwich” on your Brava touchscreen and follow instructions.
- Press green button to begin cooking.
- Note: You will flip the chicken breast after 5 minutes and 20 seconds.

Flip chicken breast
- Once Brava notifies you, carefully remove square pan.
- Flip chicken.
- Slide square pan into top shelf.
- Press green button to continue cooking.

Finish, assemble sandwich, and serve
- When your food is done, transfer chicken to plate.
- Serve chicken on toasted sandwich bun or roll with desired toppings, such as mayonnaise, lettuce, pickles, and coleslaw.
