Steak with Herby Garlic Butter

About this Recipe
Want to make a restaurant-style steak at home? Look no further! This recipe first makes a delicious compound garlic herb butter that then melts perfectly on top of the steak while it's cooking. Chef Erin loves using a combination of fresh thyme, Italian parsley and/or chives in this recipe but feel free to use any fresh herbs you have on hand.
Ingredients
- 1.0 count NY strip steak (1-2” thick)
- 0.5 cups unsalted butter, at room temperature
- 1.0 count garlic clove, grated or finely chopped
- 1.0 tablespoons fresh herbs (parsley, thyme, and/or chives, etc.), finely chopped
- 1.0 teaspoons lemon juice
- 0.25 teaspoons
- 0.25 teaspoons
- kosher salt

Prep garlic herb butter
- In small bowl, mash together room temperature butter, garlic, herbs, lemon juice, kosher salt and black pepper.
- Spoon butter onto piece of plastic wrap. Form into log and wrap well.
- Chill in refrigerator for at least 1 hour.

Cook steak
- When ready, cut 1” piece (about 1 tablespoon) of herb butter from the chilled log. Set aside.
- Pat steak dry with paper towels.
- Season both sides with kosher salt.
- Place in Zone 2 of Brava metal tray.
- Select steak size on Brava.
- Slide metal tray into bottom shelf. Press green button to begin cooking.
- Note: Brava will notify you to remove metal tray, flip steak and add butter approximately midway through the cook.

Flip steak and add butter
- When Brava notifies you, carefully remove metal tray.
- Using tongs, flip steak. Press steak down so that the bottom of steak is in full contact with metal tray.
- Place piece of herb butter on top of center of steak.
- Slide metal tray into bottom shelf. Press green button to continue cooking.

Finish and serve
- When Brava notifies you, carefully remove metal tray.
- Immediately transfer steak to cutting board.
- Let steak rest for 2 minutes.
- Slice steak and serve.
