Brava Borracho Beans

About this Recipe
This quick and savory dish is loosely inspired by both “Borracho Beans” and “Charro Beans” - two Mexican dishes that lean on pinto beans, bacon, and spices. Borracho Beans, which translates to Drunken Beans, are traditionally cooked with beer. Charro Beans, which roughly translates to Cowboy Beans, are cooked with chicken stock in place of beer. Our Brava recipe takes inspiration from both dishes and comes together in ten minutes in the Square pan. Skip the bacon and use vegetable stock in place of chicken stock to keep this dish vegan and vegetarian. Enjoy with cilantro, lime, and shredded sharp cheddar cheese, if desired.
Ingredients
- 6.0 ounces bacon or 4 pieces cooked bacon, chopped into bite-sized pieces
- 0.5 count large yellow onion, diced
- 4.0 cloves garlic, finely chopped
- 2.0 tablespoons tomato paste
- 1.0 count jalapeño, seeded and chopped
- 1.0 teaspoons chili powder
- 0.75 teaspoons cumin
- 0.25 teaspoons dried oregano
- 3.0 count 15oz cans pinto beans, drained
- 0.5 cups chicken stock, vegetable stock, or water
- 0.25 cups fresh cilantro, roughly chopped, plus more for garnish
- Grated sharp cheddar cheese and fresh lime wedges for serving (optional)

Cook aromatics
- In Brava Square Pan, stir together 2 tablespoons olive oil, onion, garlic, tomato paste, jalapeño, chili powder, cumin, oregano, and kosher salt.
- Slide Square pan into top shelf and press green button to begin cooking.
- Note: You will remove square pan after 5m 30s.

Add bacon, beans, & stock
- When Brava notifies you, carefully remove Square pan.
- Add bacon, beans, and stock to Square pan and stir. Season with kosher salt.
- Slide Square Pan into top shelf and press green button to continue cooking.

Finish & serve
- When your food is done, fold cilantro into beans while warm. Portion into bowls for serving and enjoy with more cilantro, shredded sharp cheddar cheese, and lime if desired.
